ORIGIN AND OBTAINING MATCHA

 

Matcha tea is therefore the powder of leaves of the tea plant (Camellia sinensis), finely crushed. How to get it? Manual, physical, mechanical and natural chemistry. Specifically: green tea shrubs are sun-protected for about three weeks before the leaves are harvested; after harvesting (manual or special machines) leaf stems and shrubs (those striped stripes) are removed during mechanical processing. The best assortment of matcha is harvested manually once a year in May. Six weeks earlier, that is, at the end of March or early April, the green tea plantation is covered with straw in the past and present with black vinyl foil. In this way, the amount of sunlight decreases gradually and with it photosynthesis by covering an increasingly large area of ​​land. As the light subsides, tea leaves begin to produce an increasing amount of chlorophyll and amino acids.

 

The new leaves are more delicate and the finer the buds. The flavor of tea is enhanced. Only the youngest and most green leaves are harvested. They are then treated with steam to preserve their color and nutrients and to block the enzymatic action of the leaves, then they are dried with warm air.

 

The next step is to remove stems and leaf vines, after which the leaves are milled by the use of large granite wheels that rotate very slowly. It takes an hour to grind only 30 grams of tea, and grinding is done manually.

 

This is one of the reasons why matcha tea is much more expensive than regular tea. Another is the so laborious stages of processing, but also the fact that less leaves are harvested than in the case of ordinary green tea.
